One of these is the Wildbacher Collalto, the rebellious red wine I am about to tell you about.<\/p>\n\n\n\n<p>As a sommelier <strong>The Court of Marga<\/strong>, today I want to take you off the beaten track to introduce you to a true oenological \u201crebel\u201d. A foreign, rustic, almost indomitable grape variety that crossed the Alps more than a century ago to find its sole Italian home in Susegana, in the lands of the Counts Collalto: her majesty the <strong>Wildbacher<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Wildbacher Collalto: a foreigner welcomed at the court of the Collaltos<\/h2>\n\n\n\n<p>The history of Wildbacher is fascinating. Originally from Styria (Austria), where it is mainly vinified as a tart, sharp ros\u00e9 wine (<em>Schilcher<\/em>), this red-berried grape variety arrived in Veneto between the late 18th and the 19th century.<\/p>\n\n\n\n<p>It was the foresight of the Collalto family to plant it on the clayey and calcareous soils that surround the <a href=\"https:\/\/lacortedimarga.com\/en\/castello-di-san-salvatore-susegana-guide\/\">Castle of San Salvatore<\/a>. The result was astonishing: the climate and soil of Treviso tamed the harshness of the Austrian grape variety, transforming it into a great red wine for ageing. Today, the <strong><a href=\"https:\/\/lacortedimarga.com\/en\/conte-collalto-winery-susegana-tastings\/\">Conte Collalto Winery<\/a><\/strong> they are practically the only keepers in Italy of this rarity.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\ud83c\udf77 The Tasting: The glass and the sommelier<\/h2>\n\n\n\n<p>Pouring a glass of Wildbacher (in its oak-aged version) means preparing for an experience of great character.<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>On sight:<\/strong> It presents with a dense, impenetrable ruby red, which over years of ageing shifts towards elegant garnet highlights.<\/li>\n\n\n\n<li><strong>On the nose:<\/strong> It is an explosion of woodland.
