Agriturismo La Pila in Cison di Valmarino: The History of the Spiedo Family

There is a lit fireplace at the entrance of Agriturismo La Pila, in Cison di Valmarino, which stays alight all year round. In winter it warms the dining room. In summer it gives way to the barbecue station in the courtyard, beneath the terrace where the outdoor tables are set up. It is there, between one fire and another, that for three generations the Favalessa family has kept alive the tradition of the Treviso Prealps spit-roast. We are less than a 10-minute drive from La Corte di Marga.

Agriturismo La Pila: three generations, a genuine farm

The story begins in 1975, when Andrea Favalessa, a former local sharecropper, started his agricultural business in Cison di Valmarino. In 2005, his children Beppe and Gianpiero, along with Angela, opened the actual farmhouse restaurant. Beppe left his job as an engineer in 2008 to dedicate himself full-time to the countryside and the family kitchen. In 2017, Gianpiero left the business and was replaced by his son-in-law Luca, who is now the face in the kitchen. It is he, with his wife Lara (Beppe's daughter) always by his side, who carries on the spit-roast and traditional family dishes. Beppe and his wife — Lara's parents — remain a steadfast pillar of the business.

La Pila is not just a simple country trattoria: it is an’a fully fledged agricultural business. Since 2016, the family has been rearing its beef heifers using free-range methods. In 2019, it obtained SQNPI (National Quality System for Integrated Production) certification. The produce from the land and the livestock does not just end up on plates: the family processes and sells it directly. Thus, anyone stopping for lunch or dinner can take home a piece of the very same supply chain they have just tasted at the table.

The spit roast, the family speciality

In 2016 Beppe obtained the title of Master of the Spit, awarded by the Associazione Mastri Spiedaiolo of Pieve di Soligo. An award that speaks volumes about the care with which the family treats this technique of slow cooking over an open flame. The spit-roast from La Pila arrives at the table accompanied by seasonal greens, beans, wild radicchio and roast potatoes. A dish that tells the story of the Marca Trevigiana better than many descriptions.

What to eat: from starter to dessert, all home-made

The menu follows the same principle as the farm's supply chain: almost everything comes from the family's vegetable garden and livestock. It begins with starters of their own cured meats, such as homemade soppressa — often mentioned by guests as one of the best-loved dishes. The options also include a starter of porchetta and aubergines. Among the first courses are fresh handmade pasta, homemade ravioli and ricotta-stuffed ravioli, as well as tagliatelle.

The highlight that makes the journey worthwhile remains, of course, Beppe's spit-roasted meat. The menu also offers sliced beef — including that raised directly on the farm — served with roast potatoes. To finish, homemade desserts such as cake and tart. Both the sopressa and the house wine can also be purchased to take away. This falls under the direct sale of the farm's produce.

What you find upon arriving at La Pila: the fireplace, the lounge, the summer terrace

At the entrance, the fireplace with its spit welcomes you, remaining the heart of the restaurant even in the coldest months. The dining room has the rustic and familiar atmosphere typical of local farmhouses. In summer, the centre of activity moves to the courtyard, where the station for summer barbecues is set up. The outdoor terrace, on the other hand, is arranged with tables for al fresco lunches and dinners, surrounded by the Cison di Valmarino countryside.
