In the Prosecco Hills of Conegliano and Valdobbiadene, a UNESCO World Heritage Site, good food doesn't end with radicchio and cured meats from the Marca: a few kilometres from the heart of Prosecco, where the hills rise towards the Cansiglio plateau, a cheese is still produced that almost no one, outside of here, knows by name. It is called Moesin di Fregona, and it's one of those products that tells the story better than many others of what «short supply chain» really means: a single municipality, a single cooperative, the milk from the few remaining farms in the Treviso prealps. Here is what you need to know before looking for it on your table.
«Moesin», in the Venetian dialect, simply means «sweetbread» — and it is precisely this feature that brings it closer to the area's fresh cheeses, such as Casatella Trevigiana DOP, rather than to aged cheeses like Montasio DOP: a soft texture that is firm when cut, of a slightly straw-yellow colour, with sparse and irregular eyes. The flavour is sweet and delicate, and the aroma has distinct notes of cream and fresh butter, without the sharp or salty tang of more aged cheeses.
The Moesin of Fregona is recognised as Traditional Agri-Food Product of the Veneto Region, and it originates in the municipality of Fregona, in the province of Treviso, on the edge of the plateau of Cansiglio — the same area where, among the historic dairy cooperatives of the region, they also produce the Grillo de Colmajor and cheese matured in the Caglieron Cave, the story of which we have already told in another article.
The sole historic producer of Moesin di Fregona is the cooperative Agricansiglio, based in the hamlet of Fratte in Fregona (now part of the larger Latteria Sociale di Soligo group, the very same organisation behind many of the area's typical cheeses). The whole cow's milk, collected from farms in the surrounding foothills, is pasteurised and placed in a vat at 35°C with a small addition of cream for creaminess, then enriched with cultures and rennet. Once coagulated, the curd is cut and cooked at 42°C (hence the technical definition of a «semi-cooked» cheese), placed in moulds without cloth, salted by immersion and left to dry for 1–2 days before a brief maturation of 20-25 days at 9-12°C. The result is a straight-edged cylindrical shape, about 7 cm high, with a diameter of 30-33 cm and an average weight of about 6 kg.
Moesin from Fregona originated as an everyday cheese, designed for the daily table rather than the wine bar. The two classic pairings of the Veneto tradition remain the most fitting: «bread and cheese» (bread and cheese, the simplest) and «polenta and cheese»; also excellent alongside wild greens in the traditional dish «radish and cheese». Here are three suggestions for serving it with a glass of Marca Trevigiana wine.
The Dishhomemade bread and a freshly sliced slice of Moesin at room temperature. The Pairinga Prosecco Superiore DOCG Extra Dry — its lively acidity and fine bubbles cleanse the palate of the cheese's creaminess without overpowering its delicacy.
The Dishhot polenta, perhaps toasted, with the Moesin melting slightly on top. The Pairinga Verdiso — indigenous grape variety of the Marca Trevigiana, historically linked precisely to «polenta and cheese» in farmhouses: its pronounced acidity and slender body effortlessly withstand the rusticity of the dish.
The Dishradicchio and other sautéed wild greens, with shavings of Moesin cheese. The Pairinga Bronner, fungus-resistant grape variety (PIWI) — a modern, savoury and vertical white, which pairs well with the slightly bitter note of wild greens without ever overpowering the sweetness of the cheese.
Fregona's Moesin is not a mass-market cheese: it is found mainly in the shops of local cooperative dairies and a few specialist delicatessens in the Treviso area. It is exactly the kind of discovery that makes sense to make at leisure, staying a few days among the Prosecco Hills rather than just passing through: from The Court of Marga you are in the heart of the area, just minutes away from the historic dairies and the trails of Cansiglio. Anyone staying with us can also discover local cheeses and wines without leaving the courtyard, thanks to our La Corte di Marga Wine Shop, curated directly by Roberto — or combine the tasting with a walk along the’Cansiglio Plateau, half an hour's drive from the property.
What is the Moesin of Fregona?
It is a semi-cooked soft cow's milk cheese, a Traditional Agri-Food Product of Veneto, produced in the municipality of Fregona (Treviso) by the Agricansiglio cooperative. The name derives from the Venetian dialect word «moesin», which means «soft».
Where can you buy Fregona Moesin?
It can be found mainly in the cooperative dairy shops in the Fregona and Vittorio Veneto areas and in a few specialist food shops in the Treviso area — it is not a mass-market product.
What goes well with Moesin di Fregona?
In the Venetian tradition it is served with bread or polenta («pan e formajo», «polenta e formajo») and field greens («radici e formajo»). Among wines, its delicate creaminess goes well with a Prosecco Superiore DOCG Extra Dry or a Verdiso, both produced just a few kilometers from here.
